Bake like in Rothenburg – the original at home

If you've ever strolled through the cobbled streets of Rothenburg ob der Tauber, chances are you remember it: the delicious scent of freshly made Schneeballen – crisp, sweet, round pastries dusted with powdered sugar and shaped like snowballs. A Franconian specialty, handcrafted for more than 300 years, originally made for weddings and celebrations.

Where Snowballs are at Home – and Where People Discover Them
Originally from Rothenburg ob der Tauber, snowballs are now also found in Franconian towns like Dinkelsbühl, Feuchtwangen, Iphofen, and in Füssen in the Allgäu near the famous Neuschwanstein Castle. During the holiday season, Schneeballen are sold at Christmas markets all across Germany, where they are loved by tourists from the USA, Canada, Japan, and many other countries who take them home as a sweet memory.

Bring the Tradition to Your Kitchen – Classic Snowball Recipe

Ingredients:

  • 4 cups all-purpose flour (500 g)
  • 3 eggs
  • ½ cup sour cream (100 g)
  • ¼ cup granulated sugar (50 g)
  • pinch of salt
  • zest of 1 lemon (optional)
  • frying oil (e.g., canola or sunflower)
  • powdered sugar for dusting

Instructions:
Mix all ingredients into a smooth dough and let rest for 30 minutes. Roll out the dough thinly, cut into strips, and gently shape into a ball – ideally using the Weis Snowball Mold.
Fry in hot oil (about 350 °F / 175 °C) until golden brown, drain well, and dust with powdered sugar. Optionally, decorate with chocolate, cinnamon, or chopped nuts.

Tip: Stored in an airtight tin, snowballs stay fresh for several weeks – perfect for gifting or holiday baking.
