Crispy Delight: Recipe for Long Fries
LONG FRIES
Ingredients (serves approx. 4):- 600 g floury potatoes
- 3 eggs
- 30 g butter
- 150 g flour (type 405)
- 150 g cornstarch
- Salt
Recommendation: high-heat rapeseed oil for frying
- Peel and wash potatoes, cook in salted water until soft.
- Mash or press potatoes and let them cool completely.
- Mix in eggs, butter, flour, and cornstarch. Season with salt and spices if desired. Form dough balls by hand. Tip: Wear gloves as the dough is sticky.
- Heat oil to approx. 175 °C (350 °F).
- Place a dough ball into the press and press fries into the hot oil. Use a wooden or plastic spatula to remove dough residue.
- Separate fries with wooden sticks or tongs.
- Remove after approx. 3–4 minutes using a frying ladle.
- Serve with sauce of your choice.
Refine the dough with nutmeg, paprika, onion, garlic, grated cheese, fries seasoning, or chili.
Tip for kids:

PASTRY STICKS »Churros Style«
Ingredients:- 0.5 l water
- 0.5 kg wheat flour
- 1 generous pinch of salt
- plenty of frying fat
- Bring water with salt to a boil.
- Add flour and stir until smooth and lump-free.
- Fill dough portions into the press and press into hot oil.
- Remove dough residue with a scraper.
- Take out churros after 2–3 minutes when golden brown.
- Serve warm – e.g., with chocolate sauce.
