Handmade Wood Pulp Banneton
This CRUST & CRAFT proofing basket is designed for loaves up to 750 g (1.65 lb) and is used to support shaped dough during its final rise before baking. The classic oval form supports compact country loaves and sourdough. Its smooth interior produces a clean dough surface without a pronounced basket pattern.
Each banneton is handmade in Germany from sustainably sourced, regenerative wood pulp using a traditional manufacturing method. The breathable material helps the dough retain its shape during proofing. When properly floured, the surface also helps the dough release cleanly before baking.
Use and Care
Before first use, the manufacturer recommends preheating the oven to 170°C (338°F), switching it off after 3 minutes and placing the empty banneton in the closed, switched-off oven for 20 minutes. Allow it to cool completely, flour the entire inner surface and remove excess flour. Before each use, flour both the basket and the shaped dough.
After proofing, let the basket dry completely and remove flour or dough residue with a dry brush. Never clean the banneton with water or soap. Store it in a dry, well-ventilated place away from direct sunlight. This is a proofing basket and is not intended to be used as a baking mold.

The stated capacity refers to the approximate weight of the baked loaf, not the raw dough. Because every basket is handmade, minor variations of approximately 0.5 to 1 cm and natural yellow-brown color variations may occur. These characteristics are normal and are not considered defects.
